Our chef, Noemi Cristobal, grew up in the mountains of Huancayo, being deeply influenced by the homemade dishes of her mother, Faustina, and the rich culinary culture of her homeland. These experiences left an indelible mark on Noemi and marked the beginning of her love for Andean gastronomy. After training in gastronomy and achieving a successful career in renowned restaurants, Noemi felt the call of her roots. Inspired by her mother's recipes and Huancaí traditions, she decided to open her own restaurant, Faustina Cocina Andina Contemporánea. Here, Noemi masterfully combines modern culinary techniques with the traditional flavors she learned from her mother. We honor Faustina's culinary legacy and continue to explore and reinvent the rich and diverse Andean cuisine. At the same time, all the culinary experiences offered at Faustina are completely participatory, where our diners have the opportunity to reconnect with the earth and cook with Noemí Cristobal herself.
